I know it’s Wednesday now, but we had the BEST Taco Tuesday 🌮 for dinner last night! Homemade, healthy, and yummy!! We’ve been OBSESSED with butter lettuce ever since we were introduced to it at The Springs in our FAVORITE dish, La Suprema! We went to Costco yesterday and so pleasantly stumbled upon a huge thing of BUTTER LETTUCE!!!! I swear, it’s so hard to find!! Where do you usually get your butter lettuce?? Maybe it’s a seasonality thing! Anyway, I saw it and threw it in my cart right away because I had the perfect recipe lined up for the day we finally found butter lettuce!
I really love this recipe by Joyful Healthy Eats because it’s so simple yet delicate! I LOVE cilantro so I was ecstatic to see that the dressing was a homemade cilantro lime crema (SO REFRESHING)! 👌🏼 It’s really easy to mix this recipe up and add in whatever feeds your taste buds! This is especially important to us because we usually have to opt out of onion and garlic, which are HUGE flavor boosters to dishes, but because we get really bloated, we sadly have to take them out of our meals. Without onion and garlic, our food tends to be a bit more bland so whenever we can sub with more veggies for flavor, we will! In this case, we added in jalapeño for that extra kick and although we didn’t get to add in red bell peppers and corn this time around, we think they are GREAT additives to this recipe! Here is my version of the recipe below where I added and subtracted some ingredients to my liking! Hope you enjoy next week for Taco Tuesday and share your pictures with us! 🌮
INGREDIENTS
1 tablespoon olive oil
1 lb ground turkey
1 15oz can of corn
1 red bell pepper, diced
1½ tablespoons cumin
2 teaspoons paprika
2 teaspoons chili powder
½ teaspoon cinnamon
salt & pepper to taste
1 avocado, sliced
½ cup cherry tomatoes, halved
10-12 leaves of Butter Lettuce
2 tablespoons of fresh cilantro
1 jalapeño for extra kick, sliced horizontally
Cilantro Lime Crema:
½ cup greek yogurt
¼ cup cilantro
juice of 1 lime
½ teaspoon cumin
salt & pepper to taste
INSTRUCTIONS
In a food processor or blender, add, garlic clove, greek yogurt, cilantro, lime juice, ½ teaspoon of cumin, salt and pepper to taste. Blend until smooth. Set aside.
Heat a medium pan to medium high heat. Add olive oil, red bell peppers, and corn. Cook until slightly browned. Add ground turkey, cook until no longer pink.
Add in 1½ tablespoons of cumin, paprika, chili powder, cinnamon, salt, and pepper. Stir until all the spices are mixed together.
Serve turkey mixture on top of butter lettuce with avocado, cherry tomatoes, fresh cilantro, jalapeño, and cilantro lime crema.
