Hey y’all!
Eve and I have been wanting to make our own macrobowls inspired by the delicious vegan restaurant, Cafe Gratitude & it’s sister Mexican vegan restaurant, Gracias Madre.🌱 We finally found time to collect all the ingredients we wanted to throw together and got the job done! You can totally mix and match anything you’d like, but here’s our own version we created! Enjoy!
Ingredients:
➺arugula as base
➺spinach
➺snow peas
➺tofu
➺carrots
➺zucchini
➺corn
➺garbanzo beans
➺mushroom
➺olives
➺feta cheese
➺olive oil
➺lemon juice
➺pepper to taste
We sautéed each vegetable with olive oil separately: spinach, carrots, snow peas, zucchini, and mushroom and made it a buffet style type of thing to put our macrobowls together ourselves basing the bowl with arugula & topping the sautéed veggies with feta cheese, olives, lemon juice, and pepper to taste!
