Hey y’all!
Okay, first of all… the name of this post!! It’s so so long I know, but that’s just how rich the muffins are! 😂✨ I discovered this recipe on the Zen Project 8 community Facebook page posted by the darling Amy Aifd and HAD to bake it right away! I literally dropped everything and started baking. The best part about this recipe is that it’s such a PFC balanced (guilt-free) snack! 🙌🏼 257.2 calories, 21.4g protein, 8.56g fat and 25g carb. I modified her recipe just a tad bit, you’ll see! I’m sure it’s amazing without the coconut shavings, but I’m just a total coconut freak I had to sneak some in! 😜 Amy baked mini muffins, but my muffin tins are regular sized so this recipe yielded 6 muffins for me. I’m definitely going to double the ingredients next time so I get more to devour! 👻 It was seriously heaven in my mouth! 😇 Needless to say, I’m a happy girl.💃🏻
Ingredients:
1 banana
1/2 cup egg whites
1/2 tsp vanilla extract
2 tsp grapeseed oil (I subbed with coconut oil, obsessed, I know)
2 packets of Zen vanilla protein powder (with lactose)
or 4 scoops of Orgain vanilla powder (lactose free)
1/4 cup coconut flour
90 mg or 2 tiny scoops of stevia (I opted out of this one)
1/2 tsp. baking powder
1 tbsp chia seeds (soak in 2 tbsp of fresh lemon juice and water for 30 minutes)
1 tbsp lemon zest
sprinkles of coconut shavings
Zest the lemon then soak the chia seeds in lemon juice and water for 30 minutes
Mash the banana in a bowl first then throw in the rest of the ingredients and mix well
Sprinkle some coconut shavings into the bowl and mix
Distribute evenly into the muffin tins and sprinkle more coconut shavings on top
Bake at 375 degrees Fahrenheit for 15 minutes
